Potato Soup for the Soul...

This soup is super easy and only a few ingredients. I don't really measure much when I cook, so you can't mess it up if you want to add more broth, less potatoes, or whatever you desire.. Just give it a try because it's fine flying solo or with a hot, club sandwich.

Dice up some onions (try not to cry), saute in olive oil and seasoning salt..(lots of seasoning salt bc that's a lot of potatoes)
Add Chicken Broth and 3 to 4 cups of diced potatoes into your broth. Bring to a boil and cook until potatoes are tender. Mash them some, so the soup is not so chunky. (or however you like it, I like mine smooth and Will likes his chunky, so I find a happy medium)  Last, add Cream Cheese and let it melt. I like for it to simmer for several hours to let all four ingredients marry. :)

Serve with shredded cheddar cheese and it'll treat you right.

Now, it's not all fun in the kitchen. This is what's going on over here....

I'm pretty sure they were bit by the flu bug, but we haven't been in for a proper diagnosis. We are just pushing through and doing what they learned best, "sweatin' it out". Really though, they seem to be doing a little better. We shall see how tonight goes.

  1. Yummmm.... it's not good that my mouth is watering at 8:40... the cream cheese... never would have thought of that but I bet it's the key!!

  2. That soup sounds so good...perfect for the weekend!

We're going on day three with fever for Little Man...hope y'all feel better real soon!

  3. Yum! I am with Darby, never thought of cream cheese, but sounds yum! Can't wait to try!

Girl, I am praying over your house! Brighter days can't come fast enough for you all I know! You have such a wonderful spirit about it :) Thanks for encouraging me with a right perspective on things!

  4. I made some a few weeks ago that called for frozen hashbrowns and cream cheese. Delicious! The cream cheese makes it for sure!

  5. This is the same exact potato soup recipe I use! It is divine! I serve mine with shredded cheddar, turkey bacon, and green onions on top. it's like a loaded baked potato! Yummmmmm.

    Came over from Jenn's blog:)
